Erissery Recipe | Mathanga Vanpayar Erissery | Parangikai Karamani Kootu | Kerala Pumpkin Erissery


Eriserry is one of the traditional recipe from Kerala. It served as one of the side dish during Onam sadya. It is made with combination of pumpkin and black eyed beans, cooked and then added to the coconut paste. Its can also be done with Yam, Raw banana instead of using pumpkin. 

When I tasted this erissery for very first time in a Restaurant  but i couldn't find out the name of this recipe. Then I searched some cookbooks and in Internet but I couldn't find the name of it. After that I asked about this recipe from one of my friend from Kerala. She told its Vanpayar Erissery. 

Then I find out actual recipe and tried it out, It came good for the first time. Now I do often at home and my kids also love this Kerala type kootu. Hope you too love this recipe.




How to Make Erissery Recipe 



Ingredients Required

Time of Preparation : 30 mins


Method Of Preparation



1.  Soak the Black eye beans overnight and cook with enough water and salt in a cooker for 4 whistles. Peel and Chop the Pumpkin into small pieces. Cook the pumpkin with enough water and turmeric powder.



2. In a mixer grinder, add grated coconut, green chilli, cumin seeds and pepper. Grind into a smooth paste by adding little water. Then add the cooked black eyed beans to the pumpkin and also the paste and mix well.


3. Then boil this mixture for 5 mins. The mixture should be thicker don't add more water. Then fry the mustard seeds, cumin seeds, red chillies, curry leaves and 2 tbsp of coconut gratings in 1 tbsp of coconut oil until brown. 


4. Temper the fried mixture to the Erissery.


Serve Hot as side dish for Sambar and Rice or any south Indian meals...



Note:
  • You can use Yam, Raw Plantain instead of using Pumpkin.
  • While Tempering the coconut should be roasted well the colour of the coconut changed to brown. But here i didn't fry that much in oil due to health aspect.
  • While tempering use coconut oil it will gives nice flavour so that you will get a actual taste of errisery.
