Vegetable Stew | Vegetable Ishtu


Vegetable stew is coconut milk based gravy served hot with Idiyappam and Appam. It is a mild ,tasty and its smells divinely. This gravy is cooked with lot of vegetables along with coconut milk. Coconut milk have lot of benefits. Coconut milk increases  good cholesterol in blood. It improves skin elasticity and slowing the ageing process because it contains vitamin C and Copper.It contains selenium an antioxidant that relieves from arthritis. Method

1.Cut the mixed veggies(carrot,beans,potato,cauliflower,peas etc) into cubes or thin slices
2. Take thick and thin milk from coconut.
3. Heat oil in pan add cinnamon, cardamom, clove,fennel seeds one by one and add onion saute until translucent.
4. Add green chili,curry leaves and thinly sliced ginger to it and saute.Then add cubed veggies into it and saute for a minute.
5. Add thin coconut milk to it and let them cook the veggies, until soft.
6. At last add thick coconut milk to it and boil for a minute.
7. Serve hot with Appam or Idiyappam

Note

Use fresh coconut milk while making this gravy it gives right taste and aroma.
